How about a solar still to purify some water or a solar powered Stirling engine, things that move are always good at science fairs.
If you get really ambitious, you could do a solar ice maker, refrigerator, or airconditioner using absorption cycle refrigeration. The easiest being water and salt water absorption chillers. The coldest being ammonia and salt based systems. One easy way would be to find a scrapped RV refrigerator (one of the propane powered ones) and simply focus the sun onto the boiler tubes.
